desiccated coconut, I have a bag in the cupboard but no idea what to use it for, any ideas would be greatly appreciated 🙂 x
 
Make your own Bounty bars. Mix desiccated coconut with coconut oil & sweetener & form into square bars & freeze. Once frozen, dip them in melted high cocoa chocolate & allow to set. I've never tried doing these yet, but I will one day.🙂
 
I don't know the quantities. Found the recipe on a website but can't remember which one.
 
I use desiccated coconut in my kettle porridge, which is low carb but high in proteins with loads of nuts. I got it from Hemsley and Hemsley book. If you want recipe let me know

I went off that kind of thing a while ago when I was having granola every morning but could do with the recipe for future events if you don't mind please 🙂 x
 
I have never tried it, but I wonder if it would be OK mixed with egg and made into a kind of omelette/pancake. I have made little coconut macaroon type biscuit. Egg white beaten thick, mix in the coconut plus some powdered sweetener, put on baking tray in small balls, not too near each other, then put in oven 180 degrees until going slightly golden. Take out let rest then when starting to cool down can be put on cooling tray.

I had thought about this! have you tried it? if so how much did you add and did you leave it overnight or anything to enhance the flavour? x

Just a bit of sweetener and no, not overnight, just the time it took to dish up and eat my first course. If I had them I would probably have added raspberries. I liked it. I discovered it by accident when I was on holiday and put it in my yoghurt from a buffet thinking it was ground nuts as it had the skin in apart from overdoing it a bit it was quite nice so I tried it again at home with full fat Greek yoghurt and it was yummy.
 
That sounds delicious, Radders. Will have to try that myself.
