Hi, newly diagnosed prediabetic here.

Does anyone have any tips/recipes re breakfasts and snacks that are gluten free. Most stuff in the shops is loaded with sugar and/or far too carby.

If you do an internet search for gluten free low carb or Keto recipes there are a few sites where you might find something to your liking.
I use edamame bean pasta which is gluten free and low carb.
 
The Eat Natural range has a buckwheat granola that’s gluten free and lower carb than most. You could also try a non-cereal breakfast like eggs, ham, tomatoes, etc. For snacks, Babybel, nuts, raw veg, cottage cheese, etc are good.
 
Breakfasts - full English is gluten free - bacon, egg, mushrooms, tomatoes - but probably a bit OTT most days - so just have the egg! Most people can go a long way on an egg or two either boiled or made into an omelette OR cook a few up into a Spanish-type omelette aka tortilla with whatever you happen to have - boiled ham or other cold meat chopped up, left over bits of vegetables and cut yourself a wedge - this is as OK for an on the hoof brekkie (cold) as it is for a picnic. A normal frying pan sized one needs half a dozen eggs to make a decent size one so you wouldn't want to/couldn't eat masses of it at a time.

I have creamy full fat natural Greek yoghurt with mixed seeds and berries and cinnamon for breakfast every morning and I really enjoy that, it is low carb and can't see that there would be any gluten in it. I do usually have a sprinkle of a nutty granola (Lidl - Super Nutty Deluxe) which looks to be gluten free, to give it a bit of extra texture but it is literally just a sprinkle and I do sometimes eat it without. A 500g bag of the granola lasts me probably about 2 months worth of daily breakfasts.
 
I'm not coeliac, but snackwise the Kind nut and chocolate bars that I have are gluten free, as well as relatively low carb. Salted nuts or chickpeas also.

My other half ordered some KIND bars from lowcostfoods .com and we have ended up with 72 for the grand cost of £30, given I only have a third of one a day they will last till next summer, pity the sell by date is end of Nov 2022.

Just as well food is still OK to eat after best before then! And I have eaten those that far past the date and they've tasted perfectly good still
