Has anyone tried ancient grain flour to make bread with and found they could digest it without any BG spikes or discomfort symptoms. Flours like spelt, eincorn etc?

I made some from a recipe in a Caldesi cookbook, using spelt. It was pretty delicious and didn't affect me much at all. Slices were quite small.
