there was me, plasters at the ready, safety goggles and all. Ready, steady and prepared to do battle with an alien creature-the dreaded celeriac. Well, all I can say is they it was a ***** cat compared with the dreaded turnip. Couldn't believe it, cut like butter, diced like a dream, smells a bit funny but wot the heck-here goes. I've killed it, it's in the pot and hopefully worth the effort. I even cut a few chips and am going to part boil then roast- really adventurous. Now I need to do the maths for carbs. Going to make a wee cottage pie with turkey mince. . ..
 
For your cottage pie - make sure you squeeze the water out of the mashed celeriac.

Beggared if I know - not had enough left!

I would think it would freeze fine though. It's only veggies.
 
By the time I mashed,squeezed and drained it doesn't go far. But...it was really nice. Not a strong taste-not like its smell, but tasty. The beast is tamed !!!

Chips looked yuk so recycled they went. One out of two ok. Waiting to see effect on bg
 
I found chips better if you dont par boil first. They can go mushy.
 
Ah, I will try that. Interestingly BG went down after two hours following mince and mashy
 
Celeriac is very low carb. I use it a lot.
 
I'm using it too - made a lovely 'shepherds pie' (fake cos with Quorn mince, which I like) and a lovely golden cheese topping....ooh, might go and make another one now...😉
