Am I eating the right things

I'm starting to worry that I'm not eating the right things so for breakfast it's usually toasted waffles w/wo peanut butter, lunch is usually a sandwich of some sort and tea is always a piece of meat whether it be chicken, pork, sausages, burgers, fish etc with either 2 yorkshire puddings or potatoes and a portion of some sort of veg, is this ok for a day to day basis x
 
Sounds varied to me which is what a good diet is all about I think. I want to eat peanut butter but never sure which is healthiest to eat.
 
I'm just looking for reassurance from some of the more experienced members that have been diagnosed longer etc lol I use Tesco smooth peanut butter it's lovely i have the 700g jar just now can't remember how much it was but the smaller 340g jar is only £1.30 x
 
The only thing I would suggest is are you eating enough veg, as you only mention one portion a day?

Id love to have more veg but don't know what to have as don't want to inject too much and sweet corn used to be my fav and other people in the house aren't keen on veg :( x

Most veg is fine carb-wise, and it's fairly essential for a healthy diet. Green veg especially is low in carb and full of nutrients(apart from peas but even they can be included if you just count them in your carb total). If you and your family are not great veg fans it might be a case of finding more interesting ways of cooking them. For example a stir fry of onions, mushrooms and green peppers is very savoury and quite low in carbs. I always roast rather than boil carrots as they taste so much nicer, and if eating cabbage I would shred it and stir fry with a little garlic or onion. I love broccoli, green beans and cauliflower, particularly with gravy or a sprinkle of grated cheese if I can't be bothered to make a proper cheese sauce. One of my favourite easy veg dishes is roast Mediterranean veg with halloumi or salad cheese. I
Include little cherry tomatoes and the liquor from those combined with the mushroom juices and the salt from the cheese is scrumptious!

Yes, but some of us on insulin sometimes find it isn't helpful to reduce carbs too much at a full meal, it leads to problems getting the timing of the insulin right. Also, swapping the roasties and yorkies for veg results in fewer calories, and I think Kaylz is one of those lucky people who doesn't need to to that!

I was wondering if you could factor in a bit more salady stuff in your lunchtime sandwich to help your veg intake. (Tomatoes, red peppers, grated carrot, baby spinach leaves, not just boring lettuce!)
 
I was thinking of a bit more veg too, in addition to your normal food rather than a replacement for yorkies and taters. most green veg are low in carbs, peas do have more carbs though.

2 yorkies only have 13g carbs in the ones we use sometimes I'm not even hitting 30g carbs, its the men that eat (my OH and my grandad) that aren't big veg eaters, I love tomatoes, cucumber, cabbage, cauliflower, brocolli, asparagus, and hoping to get some beansprouts today x
 
Woohoo chuffed to have gotten a bag of bean sprouts lol, they will be with tea tomorrow 🙂 x
