what alternatives are people using for potatoes etc? I’ve made some kale ‘crisps’ today which seem really nice and I’m experimenting tonight with green bean fries and celeriac chips.

I love cauliflower mash and cauliflower rice. Swede and carrot mash is also nice but was wondering what else everyone’s discovered
 
I can’t eat cauliflower as it tastes very bitter to me so I make broccoli mash; celeriac daphnoise, butter bean mash. Also I cook jacket potatoes, scoop out the flesh for OH and eat the crispy skin with paprika and bit of cheese.
 
Butter bean mash and broccoli mash sounds good. I love jacket potato I’ve only had it once since May but thinking it might soon be time to try it again the skin is my fave part too

Oh and swede chips.....aunt Bessie’s did a minimally processed frozen version that got me on to them. As with most supermarket alternatives they were discontinued due to poor sales. So I make my own now. Somehow I prefer them to celeriac chips. Funnily enough I did try making kale chips but didn’t like them; maybe I overlooked them
 
Swede chips sound good I’ll have to try them this week. As rubbish as it feels to have to checked everything you eat trying new stuff can be fun
 
We often have parsnip chips, but as with all root veg, you still have to be aware they contain some carbs, so go steady on them..

I once complained how bad the chips were one place. There was a pause, then someone said: "We didn't have any chips, they were parsnips."
 
They are much the same as beetroot, sweet potato, carrots and swede I believe. They may affect you the same as potatoes, or to a greater or lesser extent, everyone is different. I have a few ordinary chips and a few parsnip chips occasionally as my main carb unit for the day on an otherwise very low carb diet. I find parsnips and sweet potato are not as bad a floury potatoes but about the same as new or waxy potatoes. I don't eat any bread because that spikes me worse than potatoes. We are all different and whilst many of us eat very low carb, that doesn't mean that anything veg wise is off the menu, you just need to restrict some things more than others.
 
Parsnips are still lower carb than potatoes and people's systems may react to them differently, so they are still worth trying and testing as an alternative.

97 on the GI scale. But as you say not everyone reacts to high carbs
