I saw this recently on Sunday Brunch and this is my variation.


Prepare green beans, tender stem broccoli, baby sweet corn, mange-tout. Stir fry in a little very hot oil, with chopped garlic and ginger and fresh chilli, to remove rawness. Stir in 30 gms roughly chopped pecan nuts or walnuts. Add selected quantities of cumin, turmeric, garam masala and powdered star anise and continue stir frying. Add a couple of teaspoons of pouring honey ( I replaced this with a couple of teaspoons of finely ground sugar substitute ). Add a good soaking of squeezed fresh lemon and complete the stir fry. Serve with curry of choice. Very tasty and BG friendly.
