Relationship to Diabetes
Type 1.5 LADA
Parma ham and cheese puffs.

1 sheet of puff pastry
1 pack of razor thin Parma ham slices
Freshly grated Parmesan or Peccorino cheese

Heat the oven to 180/Gas Mark 5. Lay the sheet of pastry out flat on a lightly floured board, place the slices of ham evenly over the surface and sprinkle plenty of grated cheese across the top. Now roll it up like a Swiss roll and cut into thin slices. Place the slices on a non stick baking tray (or use greaseproof paper and a rack), make sure they're not touching. Bake for 20-25 minutes or until golden and crisp. Store in an airtight tin and they should keep for a couple of weeks, though ours never last that long.

Theoretically, you could do the same thing with thin sliced smoked salmon, though I've never tried it. Let me know if you do.
