My mushrooms on toast.

You need:

Bread, obviously
Mushrooms (try and find some mixed mushies just cos they're a bit more interesting to look at)
A dash of mushroom ketchup if you can find any, or Worcester sauce if you can't
A little light olive or vegetable oil
A sprinkle of paprika or cayenne
A pinch of salt and pepper

Heat the oil in a frying pan and chop up the mushrooms, then chuck them in the pan. Put the bread in the toaster, then give the mushrooms a stir round. As they soften add the ketchup/Worcester sauce and the S&P. When the toast pops up, stir the paprika/cayenne into the mushrooms and tip the lot onto your toast.

Mmmm...sounds yummy Alison, will have to give that a try sometime. I do love mushrooms. I just snacked on an avocado, chopped it up, added a tiny bit of olive oil, salt, pepper, coriander and lemon juice. YUM, and no need to faff about with CPs, insulin etc..
 
Provided you have a decent non-stick pan, you can dispense with the calories in the oil by using a few sprays of Fry-Light.
