A cauli rice convert!!

As well as a substitute for rice, mashed cauliflower can be used as a great replacement for mashed potato - e.g. in cottage pie or shepherd's pie.

Tastes delicious!

Even more importantly, unlike mashed potatoes, cauliflower does nothing to raise your blood glucose levels.

In my opinion, well worth building into the diet of any diabetic!
