Serves 4 as a meal or 8 as a side.
Ingredients:
2/3 Large Courgettes fairly thickly sliced
1 Large onion roughly chopped
8 oz strong cheddar
2 oz each peccarino and parmesan (optional)
2 tomatoes sliced
2/3 slices brown/wholemeal bread made into crumbs
.5 pint milk
2/3 tsp cornflour
1 tblsp cooking oil
.25 tsp mustard/mustard powder
S&P to taste
(NB: the sauce needs to be really thick as the courgettes produce a fair bit of water during cooking)
You need a bowl, a sauce pan, a large frying pan and a shallow oven proof dish
Turn the oven on to Gas Mark 6/200?
Mix the cornflour with a little milk till smooth, put the rest of the milk in a pan and heat a little, add the cornflour mix and stir till it thickens, 6oz cheddar, and 1oz each of the peccarino and parmesan stir till melted and add a little salt and pepper plus the mustard. Set aside to keep warm while you deal with the veg.
Heat the oil in a frying pan then add the courgettes, a bit at a time. You don't want to cook it through, just sear it a little. As they're done, spread the courgettes over the base of the oven proof dish and then soften the onion in the same frying pan and layer them across the courgettes, put half the tomato slices on top and sprinkle some S&P across, then pour over the sauce. Mix the rest of the cheese with the bread crumbs and spread evenly over the surface. Place in the oven at a high heat till the topping is toasty. Serve as a side or as a meal. You can add cooked chicken and/or bacon if you're a carnivore.
You can also make this with broccoli or cauli, or indeed all three, part cook the cauli/broccoli first and skip the searing part. Drain them very well before you add the sauce.
