hi, i want to make this at home, could you give me quantities to use please? and how long does it last in the fridge? thanks....:D
 
It is a shame that the nuts I like to eat, like hazelnut and almond are hard to cream, and the ones that shouldn't eat, like cashew and coconut are easy to eat.

I make almond butter and hazelnut. You either need a serious blender (one that can crush ice easily) or blanche them first in hot water to soften them down. For hazelnut butter I add a little bit of boiling water when mixing. Alternatively if that's all too much fuss Meridian sell Almond and hazelnut butter that has nothing added and is delicious. What's wrong with cashews? Is it the fat content? I do not work for the nut industry by the way, I am a firm fan of all things nutty 🙂

Everyone should have a serious blender, ninja and vitamix in this house, the former very reasonably priced, the latter ludicrously priced but so so good 🙂
