A good soup like this filling one from Korea. I don’t add extra protein. I find the tofu and egg is plenty. It works out around 7g carbs but I find I can ignore the carbs and not bolus for it:

2 veggy sausages (mccartney), egg, tomato and avocado salad...8 carbs
Ceasar salad with bread crutons ...8 carbs
Cauli rice veggy stir fry...8 carbs

Salmon baked with Fennel, onion and orange.
Scallops on a bed of leaks cooked in double cream and white wine
Chicken curry with cauliflower rice.
Baked chicken breasts with mustard and steamed vegetables (Leeks and tomatoes.)

White wine, double cream and seasoning can add a lot to a dish!

I love bolognaise and by using spiralised courage in place of pasta I can be around 15g of carbs. Or for a bit more substance I use Edamame and black bean pasta. Still below 20g

With sunshine I am back to what is known in our house as ‘chefy salad’ based on spiralised carrots and courgette. (I like my spiraliser even though many have pushed theirs to the back of the cupboard) . Even with a couple of small new potatoes it can be< 20g with options of loads of toppings.

Or spiralised veg fried in garlic and butter with pesto or other sauces made in bulk and frozen.

Lots of options . As others have said you may find that you can gradually increase your carb tolerance and/or add in small portions of what you have chosen to leave out at present.

Are you curious or are you planning to reduce your carb intake to 20g?
I notice you have Type 1 diabetes which is managed via insulin not diet.
Some people with Type 1 chose to eat a low carb diet because they find a lower insulin dose reduces peaks and troughs but, if you can maintain your TIR target with your diet, there is no reason to look for meals with 20g carbs or be worried that you are "way over".
I tried a lower carb diet for a while (mostly out of curiosity) and found it much harder because I also had to calculate my insulin dose for protein at a different time to the carbs and at a different insulin to protein ratio for different types of protein. I decided it wasn't worth the effort for me.
I have also read (but not experienced it myself) that a low carb diet can increase insulin resistance so some end up reducing their total bolus but increasing their total basal.

Yup, low carb made me insulin resistant. Am now 'as many carbs as I want' and my stats are still as good. Still do low carb dinners when working to keep line flat when i can't be physically active after foos
