My mums recipe book from the 1940s was always my Xmas cook book. I might try the christmas pud recipe cut down in size using frozen fruits, (poss a few dried fruits, a mix of flours ,veggie suet, eggs and alternative sugar by taste (& sense).

I don't think the Christmas cake recipe would work as a mug cake ! :confused: 😉 :D

Most xmas pud recipes have breadcrumbs and very little flour so you could try low carb breadcrumbs and almond flour. Grated apple and nuts with your other fruits.
 
ooh that sounds interesting, i wonder if throwing in some grated carrot might help with bulk and moisture?
 
I just have a small portion of normal pud and extra brandy cream *drools* I like to have some nice cheeses as well as dessert too.
 
I was thinking of Christmas pudding trifle-ish dessert, with a little mincemeat added into the warm orange jelly just to alter the flavour, and some coconut flour for extra texture along with berries and cherries - maybe some nuts but I'm not sure if they should be in the jelly and left to set or on the cream....

@Inka Im still being a little carb cautious . Im not only between 1 and 2 (type1.5/ pt; LADA). But also Only on 1000 metformin, no insulin til i see a consultant. So altho Ive upped my carbs a bit I'll see wot the future brings b4 going too high on carbs . This seemed like a good idea . a compromise on my 1st Xmas. I like my he 'mince'-frozen fruit- pies

There is a recipe for a Christmas pud on sugerfreelondoners website that you do in the microwave, not tried it myself , but may be of interest to you.
 
My Mum used to make a pretty good Christmas Pud, adapted to be not quite so crazily carby. Still packed with dried fruit though, so benefitted from sitting on top of a big dinner to slow it down
 
@everydayupsanddowns ''sitting on top of a big dinner '' isn't a phrase Ive heard before. Can you unpack it a bit. Sounds like it might be useful concept.
 
Tomorrow i hope to find time to try a Christmas pud recipe with ideas from this thread. Based on (un)frozen fruits wiv a portion of dried fruits.......

Only that my experience of larger meals is that they tend to mix and mingle in the stomach. In particular, if I have mis-calculated an insulin dose and it has worked more quickly than the meal carbs, I’ve noticed ‘fast carbs’ are sometimes not so fast. They can get mingled in with the rest of the meal.

I’d assume the same effect would happen in T2 with larger meals?

Here's my Lo carb Xmas pud .
A mix of brown flour, almond flour, milled almond mix, milled flaxseed & pumpkin seed mix. Any mix 200gm (Adjust to your need) . Frozen fruits (mostly blueberries, red currants,blackberries raspberries). 150gm. Suet (or veg suet) 20gms. Various spices, One whisked egg. Alternative sweetner 5 teaspoons. Dash of lemon juice. (capful of brandy).
Steamed in the microwave for about 15mins - until firm and skewer comes out clean.
The bowl was recycled one approx 6cm across by 4cm...... We've had a little taste from the underside. Seems ok .I'll check the carbs . Adjust flavour if desired - more mixed spices in more lemon juice or brandy or ?? make holes with pointed implemented and pour the mix over the holes. I'll reckon up the carbs.
 
The little pud probably came to around 60gm in carbs. So a 1/4 piece=15gm, 1/5 =12gm or 1/6= 10gms
If I do this again next year I'll add more spice, more brandy, and make a brandy sauce or brandy butter. My weight is rather low! And think of something else to flavour it with to give a little more flavour (possibly soak the frozen fruits in something tasty) 😛 I might try a small Xmas cake too. But as the best bit for me was the marzipan and icing then ,maybe not.
 
That's excellent Jenny, the portion of shop bought Xmas pud I had on Christmas Day was 61g carbs and sent my glucose levels soaring. It was delicious though .
Might have to have a go at homemade next year.

My homemade Xmas pud was acceptable, I put a bit too much lemon in it. basically it was mincemeat, breadcrumbs, almond flour, chopped apricots, low sugar dried cranberries, dash of spiced rum, mixed spice.
 
@Martin62 IGreat idea ,worth a try. Try in January as new year treat !!!! :D
. Some dried fruits swapped with frozen fruits , or your own idea. And the sugar with some substitute.
A xmas pudding keeps B4 hand. My recipe would freeze if made in advance. Good Luck
 
Just hd the last slice wi!th a little brandy and cream. Improved with age and the wet stuff. Fingerprick in 30 mins.
If its naughty I'll own up !
