Hey lovelies , is there a way to make zucchini bread low carb and diabetic friendly ???? Or do I need to avoid it at all costs ?? I remember one of my family members that made it but it had walnuts in it and obviously zucchini , I wouldn’t mind trying to make it but was wondering to possibly turn it into low carb and still enjoy it every now and then , obviously testing before and after I eat it to see if it raises the good old blood sugars . Please and thankyou .

That would be "courgette" for most of the folks here, I do believe.

Anyway, I have no idea about how to make it low carb, sorry, except to wonder if it'd be any different to other low carb breads?

Yes it would be courgette to most of us!
 
If you google zucchini bread keto there are several recipes, they appear to use almond flour.
I can't say what they would be like.

I have tried it.
I tend not to go keto, as I find they contain a lot of fat, which pushes the calories up.
I also don't like using eggs in bread, for me, that more a cake recipe.
I simply used grated zucchini in place of flour.
Coconut or almond flour gives a better texture than gram flour, but over the years I've tried them all, with varying results.
