Hi All
I must share my post prediabetic meal discovery that I would eat even if I did'nt have to cut down on carbs and that is a 'vegetable scramble';
In a large non stick saute pan with a lid pour some light olive oil and heat over a medium flame, then add a couple of handfuls of mixed green vegetables (broccoli, asparagus, mangetout, spinach, fine green beans) also to include some sliced mushrooms, heat and stir and sauté together well until thouroughly softened for 15mins or so then add 2 heaped dessertspoons of wheat bran (for high fibre, sold at Holland & Barrett) some garlic granules and a generous measure of dried mixed herbs. Turn up the heat and add 3 or 4 large beaten eggs, toss together well until eggs are 'set' into the veggies and serve immediately on a warmed plate. Serve with a side salad if preffered. OMG, totally delicious, loads of protein, fibre and hardly any carbohydrates.

I have a lot of wheat bran in my cupboard because I use it to make keto bread sometimes (and once in a blue moon I make a keto version of Wheetabix with it) but I make a few versions of keto bread and not all of them use wheat bran and it comes in a BIG pack so finding another way to use it up is very welcome.

I will give this a try.
 
I make something similar but also add cauliflower rice and a bit of chilli.
