Relationship to Diabetes
Type 2
Vegetable Crumble (serves 4-6)
4, courgettes cut into thick slices( aprox ?1 coin thickness)
3 lrg sweet potatoes pealed & cut into chunks
2 red onions- peeled n diced
3 different coloured peppers, de seeded n cut into chunks
2 cloves of garlic-peeled n finely chopped
1 lrg tub of half fat creme fraiche
2 reduced salt veg stock cubes

Crumble topping
4oz flora marg
8oz brown seeded flour or flour of your choice.
4oz redused fat cheese (grated)
sprinkle of fine oatbran/ oatbran sprinkle

Place sweet potatoe into pan of boiling water cook untill just soft n drain
put little olive oil in sauspan gently fry onions,peppers,garlic n courgettes
add sweet potatoes and stock cubes
mix together then stir in creme fraiche, season with little black pepper, simmer for 10 mins
make crumble flour n marg in bowl, rub together till it looks like bread crumbs add cheese, place veg mixture into a deep oven proof dish n top with the crumble mixture, cook in oven 190 degrees celcius,Gas 5 untill brown on top aprox 10-15 mins.
