Hi I am 3 months in to type 2 and I am a lover of desserts. My mother always said that even as a child I left room for dessert as she was quite traditional and baked. I can't bring myself to bake Welsh cakes now as I wouldn't be able to stick to one hot from the bake stone.
I've tried having 1 profiterole and my blood sugar spiked. I can eat double cream and strawberries but it's not a pudding!
As my daughter is vegan a few times I've tried a vegan dessert and even a vegan iced birthday cake and my blood sugar only rises about 2 which I'm happy with. So feeling more confident and having had a low carb lunch (Wagamama chicken salad with vegetable and chicken side) we went to a vegan cafe for dessert today. I had a gluten free home made vegan chocolate bounty bar! I tested my sugar 2 hours later and 7.4 then an hour later back down to 6.5
Has anyone else found that diary free cakes/desserts cause less spike and if so do they have any good recipes.
