Rock Cakes

I haven’t had a rock cake in years. Now I want one! Yet again, I long for the ‘reach through the screen and take one’ facility :D
 
Hi Martin, can I ask are your bakes low carb or just ordinary recipes? I was diagnosed type 1 in September and love baking but I adapt the recipes to gluten free as I have coeliac disease. I am not on insulin yet and find that a small slice of plain cake eg gluten free ginger cake, 1 small homemade mince pie, one small sausage roll etc, doesn't spike my readings which I am happy about as I thought I would have to give up baking. Your baking looks great

Hi Ellen , they are all low carb , sugar free recipes , I get a lot of them from sugarfreelondoner.com , she has loads of easy to follow recipes.

Thanks, I think I am following them on Facebook. However, all the sweetener they use puts me off making anything. I just use recipes that have minimal sugar in them to start with and then substitute the wheat flour for gluten free flour.
