i made a rather nice banana bread yesterday, and since it's made with flax, almond, maple syrup and banana it's lower carb than most. It isn't tremendously sweet but I guess you could either add more maple or banana or liquid sweetener if you prefer.

Ingredients
220g of ground almond
30g of butter
300g banana or roughly three large bananas
1/2 teaspoon bicarbonate
Pinch of salt
1tablespoon lemon juice
2 tablespoons maple syrup
1 teaspoon vanilla essence
1 teaspoon cinnamon
30g ground flaxseed (linseed)
3 large eggs

Mash banana with butter until creamed (mixer is best). Then add eggs, maple, vanilla essence, bicarbonate, cinnamon, lemon juice, salt and eggs into the banana mixture (mixer is best again). Finally add the almonds and flax and mix thoroughly. Preheat oven to gas Mark 5 then cook in loaf tin on same temp for about an hour and a quarter. I line the loaf tin with grease proof paper to make it easier to get out.

My friend gave me the recipe but I think it's Hemsley and Hemsley again, because I think I tried it before with whole flaxseeds and it didn't come out so well!

Sounds gorgeous. Will have to try this.

... and the carb count is? A large loaf tin or a small one? - I don't know how you can work out how many likely slices you would get - and how many carbs each would be, without both of those - let alone cook it.

So the total carb seems to be c 152g, so we only need to know haw many slices it provides, now.

Depends on the size of you loaf tin and your appetite. I got 10 substantial slices and used less banana so approx 10 per slice. My loaf tin is about 23 cm by 12 ish, it's old dented and doesn't have a size on it.
