I have a 350g jar of peanut butter use by date May 23.

Would like to make something with + oats

Any recommendations for a quick easy recipe, I hat throwing food away, even can bake something to give away to neighbours or friends, something that will keep a few days.
 
I personally wouldn't worry too much about the use by date but that is your decision.
Yes, satay sauce for a stir fry, peanut butter, soy sauce, bit of chilli, some yoghurt, bingo.
Like the sound of the curry too.

Not even half way through May so would definitely use it up, even if it was August I'd still eat it if unopened & looks OK.

That's a best before date not use by. It may not taste quite the same after (though in my experience you have at least 6 months) but won't be unsafe to eat
