pancakes anyone?

I just wondered how everyone got on with the pancakes yesterday. it was my first 'pancake day' and normally I could have just ignored it.... but this week I am looking after my 13 year old grandson.... and he requested pancakes 🙄

I could have 'cheated' and bought them ready made but I noticed they contained sugar so I made them myself..... just the normal way with white flour, egg, milk and a little water (because I wanted to know the effect made with white flour)

100g flour + 1 large egg and some milk made 6 pancakes...... I had 2 of them (if you want to do the maths).... 1 of them was with minced beef and veg that in our family we call Hot Pot ..... and 1 was with fresh berries and a tablespoon of creme fraiche

before eating BG was 6.9
after 1 hour 11.6 😱
after 2 hours 7.8

so... I spiked as high as with one small banana LOL ... but came back down ok after the 2 hours

all in all it wasn't too bad for me .... and boy did I enjoy them!!! :D

what about you guys? what did you have on your pancakes?
 
We're having 'shrove Wednesday' instead (yesterday was a bit mad for my girls homework-wise).

I'll be cooking them, which usually means I don't have too many, so hoping it will be OK 🙂
 
I had 2 American Pancakes topped with American Pancake Syrup I've craved them for months so really enjoyed them.

Before...6.8

refused to test at 2 hours, didn't want to panick :D

4 hour test... 7.2

So I was very pleased with that result.
 
I hypo'd slightly after mine, so had some chocolate biscuit things, and woke up at 6am on 18. Not a happy bunny, considering I did okay with the pancakes themselves! :(
 
I made 8 and got on fine i had lemon juice over mine and son had sugar on his and my readings after were 5.3 6.5 x
 
I had one with lemon and a very small amount of sugar on top - levels after were not great :( 16.8, dropped to 12.7 before bed after a small correction and woke up on 13.7! I was feeling unwell last night too so maybe it wasn't all down to the pancake!
 
I had a couple of savory pancakes - same recipe as above but with Spinach blended in to the mix.

served these with some beans and lentils.

Took too much insulin so had to have a late night snack.
 
We will have our pancakes later as we will all be together for dinner.

I used to make a batch of pancakes. My neighbour before she passed on used to like them with a cheese and vegetable filling, one was a meal for her, so she would have them for lunch and dinner. We always have them with fruit, lemon and sometimes a little sugar if the fruit is not very sweet.
 
We had pancakes for dessert.

Carol was hypo(2.7) before dinner. She had 3 pancakes (2 sugar and lemon, 1 chocolate spread) for dessert.
She was 8 two hours after dinner, but woke up 11 this morning:(
 
I cheated this year and tried M&S ready made microwave pancakes, I didn't use the lemon sauce that came with them. I had lemon juice and truvia on them instead of sugar as I don't use sugar lol the Truvia was sent to me by a friend in Canada, it is supposed to be better than Splenda, this was the first time I tried it and it wasn't bad. Prefer the pancakes that you make they taste better, but the M&S ones were ok. I bought 2 packs so will have the others tonight but this time with ED Smith Syrup

I ate them about 8pm and when I went to bed at 10pm ish my BS was 6.6 but was 10 this morning.

Oh did I get this wrong or did I get it wrong....

I had normal plain pancakes with a sprinkling of splenda and a dash of fresh lemmon juice, Les had sultana's added to his...

Worked out my carbs for the ones I had, 53 in total, so 2 units up front the rest extended over 1 hour, by an hour in I was hypo 3.1mmol/l so treated with jelly babies.. 2 hours a nice 5.5 mmol/l's so feeling rather chuffed with myself, until I went to have a snack arond 10.30pm I was 9.7mmol/l😱 Which for me is very high indeed... I was gutted, no snack and a correction stayed up another hour and went to bed feeling the ickky...

But woke with a nice 5.5mmol/l this morning..

Hubby faired a lot better than me, he hit 8 mmol/l but stayed there all night
 
Aw! I hate it when you've got yourself geared up for a nice little bedtime snack and your levels are too high! Yes, I know I could inject, but I never inject that close to bedtime as the potential consequences just aren't worth it :(
 
I had 2 very small, very thin (home-made) pancakes with a very little demerara sugar and a squirt of lemon. Went to bed at 6.2 so can't have been too bad for me. OH had 3 large ones with a goodly helping of caster sugar and lemon - "it's not fair !" was heard loudly in our kitchen.
 
I had fun, I had 2 pancakes with a couple of tea spoons of strawberry jam 7CP. Before I went to bed felt like death and was 18mmol corrected and went to be and got up at 7.7mmol so back to normal.

I had 2 homemade pancakes with Slendasweet granules (by Sainsbury) and bottled lemon juice. Didn't test afterwards though, but felt fine and thoroughly enjoyed them.
