Oil For Mayonnaise

I've been making our own mayonnaise for some time now using light olive oil. I'm in Portugal now for a few months and all the olive oils I try are to strongly flavoured,
The vast majority of oils are described as extra virgin but we found one that was just virgin olive oil
Should I be looking for a high or low acidity?
 
It’s not so much acidity as flavour, I never use olive oil for home made mayo, it’s far too assertive. I always use rapeseed oil for a lighter flavour. That’s what I use for frying, generally.
 
Thanks for that, yes it is more of a flavour. It's just that the last couple of batches have been rather bitter. Have to find the Portuguese for rapeseed oil now 🙂
