I won Slimmer of the Week at SW tonight, and am now the proud owner of two whole melons. One Honeydew and one Canteloupe. I'm not averse to a bit of melon now and again, but would struggle to eat a whole one, let alone two! Can they be cut up and frozen, or would that turn them to mush? Any suggestions?

Considering your diabetes I wouldn't use the sugar or syrup methods of freezing😱 Further instructions:http://pickyourown.org/freezing_cantaloupe.php

If you don't have a vacuum machine (and I would recommend you get one) then freeze them on an open tray for maybe 1hr and then bag, removing as much air as possible to stop freezer burn and ice formation. It's possible they will be a bit mushy when defrosted so see if you can find some recipe that uses tham.

I had the smaller half of the canteloupe with my lunch (a bit piggy, I know) and I'm only just starting to feel hungry now. I don't have a meter because I haven't found a GP who will prescribe the strips, but I didn't get hunger pangs an hour after eating which would have happened if I had overdone it! Will share the rest with my granddaughter tomorrow. I'll have her with me so that my daughter and hubby can go to 20 week scan in peace!
