As the title says I'm looking for ideas please of meals to do for when it's too hot for standing in the kitchen cooking. Not really a salad or pasta lover.

That's were I struggle, don't like salads cannot stand fruit, don't like rice or pasta, or anything with garlic or spices in :(
 
BBQ, I often have cereal in the evenings these days to be honest. Or beans on toast.
 
I tend to graze on veggies and dips if it's really hot. I made chicken piccata the other day and will have the last of it with some courgette tagliatelle tonight.
 
Hubby's just phoned and asked what we would like for dinner. We've agreed on a nice chicken salad for tonight. I could live off salads :D
 
Grilled chicken with couscous or bulgar wheat is nice. If you use a tasty stock with some fresh herbs for the couscous/bulgar then add some chopped fresh tomatoes, cucumber, olives, or whatever salad veggies you like, then bung it in the fridge it's lovely. I like to use a griddle pan for the chicken and usually put lime juice, garlic and chopped chillies in the pan for flavour!
 
Potato salad, coleslaw, couscous salad, Scotch eggs - there's lots of "salady" foods that are lush and don't contain salad. :D
 
I eat salads most evenings but my man isn't impressed with this too often. Just cooked him dinner involving the oven and two rings on the hob. Absolutely boiling by the time it was ready. He's having salad tomorrow - or he's cooking - which he claims he can't do! :(

For the last few weeks, meals have been with Salad, but every now and then I try to break out to something different - even I get fed up of the salad. The OH is a treasure as he is not diabetic, but lurks / puts up with the generally low carb I aim for. Anyway - here are some thoughts for din dins.

1. omelette / fritatta with minimal salad on the side

2. smoked mackerel - I eat them "fresh" from the vacuum pack or I buy the small tins from tesco. They do mackerel in a spicy tomato sauce and I drain off most of the sauce, mash it up a bit and spread it on one side of a piece of toast and pop it under the grill. (I make my own bread, but Soya / Linseed bread by bergen is reasonably lowish in carbs).

3. Scrambled eggs / poached eggs on toast

4. Chicken fajita wraps - buy a spice mix from the supermarket / mix with the chopped chicken and fry. Use tortilla wraps to hold the chicken. Keep an eye on the wraps - they can be a bit carby if you are following a low carb diet.

5. Chilli con carne - with not too much rice for me. Tastes even better if cooked one day and eaten the next.

6. Sometimes I do a fancy sandwich, but get himself to whip round to the chinese for chips - at least I don't have to turn the oven on.




I try where possible to cook food early in the morning for eating later i.e. poaching chicken in stock for a stir fry that evening - brings down the cooking time in the evening or I use a slow cooker to do the food like chilli or curry - they don't tend to emit a lot of heat over the course of a day.
