Who knew a sachet of Harley’s sugar free jelly mixed with 70ml cold and 70ml boiling water and whisked for 10 minutes makes marshmallow! Needs to be the consistency of whipped cream.
Pop in fridge for a few hours (preferably overnight) cut into squares and dip in melted dark chocolate.
Could be used a a trifle layer also

Oh wow thanks for the tip. Will definitely try this.

Would ot be for me as I don't like the aftertaste of sugar free jelly.

I guess this could also be done with "normal" jelly.
But I remain intrigued by vegetarian (possibly vegan) marshmallows. Were these the original made with marsh mallow root?

Gosh! What a discovery @EmmaL76 😛

I’ve used a vegan gelatine alternative when making a lemon meringue pie (with aquafaba for the meringue).

It seems to be a mix of carrageenan and locust bean gum (whatever they are!)

I remember a granddaughter going out with a chap who reckoned he was a vegetarian (whose dad was a C of E vicar) and his mum told our daughter after daughter had specially made him a veggie jelly one Xmas teatime that she'd never bothered to buy veggie gelatine, just made normal jelly, didn't bother telling him how gelatine was derived and he still ate it anyway!

He didn't last all that much longer with her anyway so we haven't needed to buy any more since.

The only thing I know about marshmallows is if you eat too many you get pink sick. 😱
