Hi,I am new to cooking and made some low carb rolls.I used coconut flour,baking flour,ground flax seed,cream cheese and mozzarella and 2 eggs.They came out tasty but a bit dry.Has any one cooked these and how do I get them not so dry,thank you

The recipe I used had almond flour/ground almonds, coconut flour, yoghurt or sour cream, egg, melted butter, baking powder, baking soda salt but they were more like scones as they were quite sweet but actually very nice.
 
I made some of the microwave bread once with almond flour and eggs etc. It was OK but had more of a cake texture. I only made enough for 2 slices so there was no worry about it going dry as it was used for a bacon sarnie there and then. Cooking in the microwave means you don't have the expense of heating an oven and can cook a small amount often. Personally I like the yeasty taste of bread which it didn't have of course so I never bothered again and I no longer really see a need for bread as I have found other ways of eating that doesn't need bread anymore. It was useful to have an option in the interim period whilst I was adjusting to life without bread but I am past that stage now.
I found the chaffle wraps worked better for me.... A kind of crepe/pancake batter with cheese and eggs and I think there was some psyllium husk to help it bind and give it fibre. Then a hot frying pan with hot fat and pour it in as if making crepes. I am sure @Drummer would have the Chaffle recipe. You can use the same mixture to make waffles too.
