Maybe this recipe will please those who haven't given the thumbs to other pancake recipes!🙂

INGREDIENTS
1/4 cup unsalted butter (Not 1/2 as mentioned in the video
1/4 cup cream × sour cream works too
1 Packet Stevia
3 eggs but add another if the batter is too thick
1/4 teaspoon salt or more to taste!
1/2 teaspoon vanilla extract
1/4 cup coconut flour (About 25g)
1/2 teaspoon baking powder
Water optional

The main difference is the flour part of the recipe. I do keep playing with ratios half coconut flour, quarter almond floor, and quarter soya floor. It is difficult trying to get the texture right, but I was fairly happy. I do have a sweet tooth so extra erythritol based sweetener (with stevia)
I have also made pancakes (and Yorkshire puddings/toad in the hole) using coconut floor and then adding gluten powder which gives a consistency much closer to the original recipe and is still low carb.
Snap ~ here's another one with a sweet tooth! It makes my diabetes difficult to manage on occasions ~ but I rather like your use of almond flour and gluten powder, tho I'm intolerant to soya. I'll give this a whirl once I've bought the ingredients.
