Keto coconut and raspberry sponge

Made this today. Yummy, it wont last long!
Into melted butter add dessicated coconut, erithrytol, vanilla essence, baking powder, raspberries(I used straight from freezer) and stir well. Then add almond flour and mix in. Finally add two beaten eggs and mix. I use just the one oven proof bowl from start to finish so I can now put straight into microwave oven and cook on High for approx 3&half mins depending on amount of batter in the bowl. (I don't weigh my ingredients, just guestimate!) When a knife is inserted into centre, it should pull out clean, if not cook it for a little longer. When cool, add some cream cheese frosting/ whipped double cream.IMG_0294.JPG
 
This looks lovely. I made a Keto Lemon Cake today. It was OK but a little "wet and eggy". Need to adjust the recipe a bit
