If I was to try a diet low carb, moderate protein and high-ish fibre, is there any advice on how this may work for me. My levels seem to be rising slightly but need to nip them down again...

The best advice I have is to chat with your doctor or dietician (if you’re fortunate enough to have one) about it before starting. Diets affect different people in different ways and to speak with someone who has access to your medical history would be useful before going ahead with any diet. In any case, I hope it gives you what you want.

Start with an analysis of your present diet, to see where you are starting from.
The modern diet is so high carb and type two diabetics can't cope with it.
I went back to doing Atkins as soon as I was diagnosed, at my maintenance level of 50 gm of carbs a day - and my diabetes just went away.
The nurse I saw advised that I should avoid red meat and most fats - then she looked at my blood test results.
Most people find that eating the normal fats found in meat and fish etc lower cholesterol and triglycerides, and a recent study found that people who die at a greater age had indications of eating more fat from dairy products.
