Iceberg wraps....

Iceberg is not my favourite lettuce by a long chalk and as a result I never buy it, but my kind partner was in the supermarket the other day looking for bargains and he came upon a reduced Iceberg for 7p. He knows I like salad and veggies and the week before he turned up with a reduced red cabbage as a gift..... Some men buy their significant other flowers, mine buys me out of date veggies 🙄 .... but it is his way of showing that he cares, so I try to be gracious....

This lettuce has neen sat goading me not to waste what is essentially a token of love from Ian since Sunday, so once I had finished my favoured lettuce which I had previously bought, I decided to tackle it yesterday before it went rotten. I have many fond memories of food from the 70s and 80s but iceberg lettuce salads is definitely not one of them and having eaten nice salads for several days I was struggling with the prospect. Anyway, lunchtime yesterday I was in a bit of a rush and in need of shopping, so the fridge was pretty empty, but I grabbed a tin of tuna and drained it and mixed it with some mayonnaise and then had the bright idea of using the iceberg as a wrap and filled several leaves with the tuna mix and strips of cucumber and tomato and red pepper. It was rather messy to eat but absolutely delicious..... but only used up a small portion of the lettuce, so today, I fried some mushrooms and black pudding and again used it with mayonnaise to stick the ingredients together with another small tomato and cuc and red pepper strips with the black pudding, mushrooms and mayonnaise and once again it was really delicious and took very little time to throw together.

I must confess, I miss the convenience of bread more than the taste, so this really was a great option.

I must remember to tell Ian how much I enjoyed his gift.... even if it wasn't exactly my choice.... Maybe I will get lucky and he will buy me another one sometime 😉
 
I do similar things with cold foods - though I prefer using coleslaw rather than mayonnaise - I also get other tinned fish, as I eat a lot of salads in summer and like to have an assortment, though there was one with peppers which was memorable, and subsequently avoided.
 
I use butterhead lettuce to make wraps and sometimes I use big ham slices.
I like using cream cheese to glue stuff together.
I particularly like ham with cream cheese and cucumber.

I made the fatal mistake of planting too many lettuces and of course they are now all ready at once, so I might just try that for an idea. Self seeded rocket as well coming out of my ears as well but rocket pesto is not too bad with some edamame bean pasta.
 
@NotWorriedAtAll Yes, I used to love butterhead lettuce (Dad used to grow it when we were little) but haven't seen it in the shops and keep meaning to get some seed for the poly tunnel. I like the idea of cream cheese as glue.... a bit more robust than mayo for the job, but unusually I am out of that at the moment and @Drummer, yes, I use coleslaw too but out of that as well, so left with just mayonnaise which I do also really enjoy but more messy. Off to the shops to stock up on those things mentioned plus a few other essentials. Still feeling rather full after my wraps earlier. 2 pieces of black pudding seemed to go a very long way and I still have 2 pieces left for another day .... along with the rest of the iceberg.
 
Love iceberg lettuce, use it with grated carrot & rocket as base to put other salad ingredients on top.

Never understand why some peeps just eat salads in summer, we eat them all year round.
 
Iceberg is great for making wraps - lovely crunchy ones with loads of possible fillings. We grow a lot of lettuce of various varieties and when we have a surplus we make soups with them, lettuce and onion is one of our favourites.

I get mine from Tesco online. Then again I get almost everything from Tesco because I haven't been in an actual shop for more than two years now. They do a whole butterhead and a butterhead bagged salad ready washed for my spoonless days.
 
In my home-made wine making days, I used to make a really nice white from lettuce.
