This is probably glaringly obvious, but I didn't know, so thought it might be worth a post.
A friend on a low-carb diet recommended grating cauli and then microwaving it for 3-4 mins with no water and using as a substitute for potato/ rice/ pasta.
It certainly seems to fool me and is hopefully better for BS control.
 
There are a few of us who do this or something similar. Grating it is a bit messy, so I blitz it in a food processor. I stir-fry it with spices (Tesco's paella seasoning is nice).

Try mashing cooked cauli and use as the topping on a cottage pie.
 
Yeah. Apparently mashed cauliflower is a great substitute for mashed potatoes. Saw it on Street Food. Most people didn't know it was cauliflower.
 
The stir fry thing sounds great - will be trying that.
 
Try these:

Break a nice fresh cauli into florets. Microwave or steam it until nice and soft. Drain well, then mash or puree the cauli until quite smooth. Stir in leftover cabbage, top with grated cheese and bake in the oven for about 20 - 25 mins until nicely browned on top. Or take a bag of spinach, puncture the bag and cook it in the microwave for about 1.5 mins until wilted. Place in an oven-proof dish, top with the mashed cauli & cheese and bake as above. Absolutely lovely.

I did the spinach version for a dinner party. When I asked what they thought they were eating the majority said mashed potato. 2 peeps knew it wasn't potato but couldn't put their fingers on what it was. All 3 couples asked for the recipe.
