Has anyone tried Sugar Free Londoner's recipes for Gingerbread and/or Ginger Snap Biscuits? My treat for myself this Christmas has been some almond and coconut flours and some sugar free brown sugar substitute all of which will hopefully be here on Sunday and I'm looking for recipes.
 
Hi Mark , Yes I've baked the gingerbread loaf and made ginger biscuits and gingerbread men using sugarfreelondoners recipes. All delicious and her recipes are so easy to follow.
There are lots of recipes on line from other bakers too.

not tried them but they sound nice Let us know how it goes
 
I've made the peanut butter cookies from there, the gingerbread is next on the list. I'm not a big biscuit eater anyway, but it's nice to have an occasional sweet treat without worrying.
 
I tried the biscuits last night and they're very nice. All of 25 minutes to make as well from start to finish including clearing up. Hopefully I'll be having a go with the gingerbread cake recipe this evening if time allows.

I would say it took a moment to move beyond the almond flour and the different taste and texture. They're great with the ginger recipe, I'll need to try less strongly flavoured recipes to decide if I like it for general baking.

I made my mince pies with half almond flour and used juice of an orange and zest rather than water. The mix was a but more fragile to roll out but cooked fine and they taste very good.
 
I wish I'd known about this recipe before I went to the Christmas market in Aachen, Germany, where I ate my own bodyweight in gingerbread slabs! It is the most moreish thing I've ever eaten.
