OK so I fancied some cheese, after all I'm only human.

I bought some mature low fat Cheddar cheese, well yesterday for tea [main meal lunchtime] I had One slice Burgen soya & linseed bread,two kallo rice cakes, thin spread of Bertolli spread, low fat cheddar cheese [toasted as a Welsh rarebit ]1 cup tea no milk or sugar, my reading after 90 mins was 8.8

I thought I will have exactly the same today, but instead of the Welsh rarebit I just had a piece of cheese about the same a matchbox size piece, my reading after 90 mins 6.3!

Go figure that one, I can't.

Did you test immediately before so you could see what the increase was. I can't have cheese anymore (long story) but its the one thing I crave....especially brie...yum yum yum xx

NB both are within the 2hr 8.5 range...

Sorry not sure I'm understanding - when you say you didn't do the Welsh Rarebit part, do you mean you didnt have the bread, or just that you didn't melt the cheese?

If you mean (as I think you do) that you just didn't melt the cheese, it may be that you digested the cheese more quickly when it was melted and that effected how quickly you digested the rest of the meal (because of the protein/fat content). The non melted cheese may have taken you linger to digest and so not effected the speed you digested the carbs (bread etc)

You really need to check before and after the meal to be able to judge properly, unfortunately. Otherwise it can only ever be a guess:(
