Had mushroom stroganoff this evening. This used to be a regular with us but because it's served with rice I haven't had it since diagnosis. Tonight tried it with cauliflower rice, which I hadn't tried until now, and it was fine. An old favourite back on my menu!

When my wife and I first got together 30 years ago this was the first meal she ever cooked for us. It was one of her favourites when she was a student. Believe it or not she still has the same cookbook.

Cauli Rice is quite versatile and can be used as is, or mashed and used as a substitute for mashed potato.
