Bigos - Polish Low Carb Stew

After posting in the Seven day average thread that I was making Bigos a few people have asked for the recipe, so here goes.

Makes four portions or thereabouts.

NB all amounts are approximate

One large jar Sauerkraut
Polish sausage - I use kabanos
Smoked bacon 250g
Chicken 300g
Mushrooms 200g
I can plum tomatoes

Chop the bacon and sausage into small pieces and the chicken into bite size chunks
Fry the meat in a little oil until the chicken is browned.

Add the mushrooms and tomatoes .

Cook until the liquid is reduced.

Drain the sauerkraut

Mix thoroughly with the cooked ingredients.

Place in an oven proof dish and cook covered in a lowish oven for as long as you want.

It's a pretty free and easy recipe and there are literally dozens of versions according to my Polish friends.

NB tastes even better warmed up the day after

Thanks khskel, I have copied this and will try it when I can, sounds nice. I always avoided Sauerkraut, didn't like the sound of fermented cabbage, but decided to buy a jar to try and found that I enjoyed it, so often have a jar in my cupboard.🙂
 
Saurkraut is supposed to be very good for one's gut biome. I will get my brother to give this a whirl, thanks for the recipe. 🙂
