Hello all, is anyone able to answer my question? I regularly sprout dried beans for a couple of days prior to cooking, does this lower the carb count at all. Supposedly makes them easier to digest. Thank you.

I think it probably will as they will have used the stored starch in the bean in order to grow. Bean sprouts are 3g carb per 80g, Is it mung beans you use to sprout. I think that is what they use for bean sprouts or aduki beans.
 
Thank you, I sprout loads of bean varieties, and some seeds like sunflowers. It’s fun to do and I thought it must bring down the carbs.

It may not.
Sprouting may actually convert phosphates into sugars.
Basic fertiliser is nitrogen, phosphorus, and potassium.
 
Google suggests that they are low carb and suitable on a keto diet.

They are mostly water, but sprouting would appear to increase carbs.
It's minimal, but it was the question.
I guess it depends on comparing dried beans, to hydrated sprouted products weight for weight, or the same amount of dried beans before and after sprouting?
